Australia Day is all about celebrating this beautiful country of ours and what it means to each of us, to call Australia home. When l think of Australia, l think of golden sands and bright blue skies and our love for the great outdoors. To me there is no better way to celebrate this day, than with a day at the beach!
My Australia Day is not about the red, white and blue, but about the sunny and bright shades of summer, as well as our wonderful summer produce! I couldn’t wait to prepare a yummy picnic for us to enjoy by the sea, and packed some rolls, coleslaw, pulled BBQ pork as well as a yummy mocktail l like to call “Meet me at the Beach” which consisted of frozen tropical fruit, fresh mint, cloudy apple cordial and soda water. We finished our picnic with a family favourite of rocky road pops, which aren’t so pretty, but delicious with marshmallows, honey macadamias, cranberries, coconut and of course chocolate!
I hope you too will enjoy this Australia Day, however you may celebrate it with your family and friends? I know we will be on the banks of the Murray River enjoying a little picnic and a bit of the great outdoors!
