Strawberries & Cream Dessert Duo

Here are two beautifully sweet but simple desserts that are perfect for a garden party, a picnic, or the Spring Racing Carnival.
Strawberries & Cream Lamington Cups
Makes 12 mini serves
250g strawberries, chopped
300ml thickened cream
1 teaspoon vanilla essence
2 tablespoons castor sugar
6 Lamington (or plain vanilla) sponge fingers
Crumble the sponge fingers by hand and then press the crumbs into serving cups, ensuring the base of each cup is fully covered.
Pour the cream into a bowl with the sugar and vanilla. Using an electric mixer, beat on high until soft peaks form.
Fold 3/4 of the chopped strawberries into the whipped cream and then spoon into serving cups. To finish, top with the remaining strawberries.
Strawberries & Cream Rocky Road
Makes 25 pieces
500g milk chocolate
125g marshmallows (mix of pink and white)
125g strawberries and cream lollies
1/2 cup desiccated coconut
100g Turkish Delight, chopped
Line a slice tin with baking paper.
Combine the marshmallows, strawberries and cream, coconut and Turkish Delight in a large bowl.
Melt the chocolate until smooth.
Pour the chocolate into the marshmallow mixture and stir until well combined.
Immediately pour into the slice tin and refrigerate until set.
